because of lack of oven space I do our turkey in an electric roaster oven.What can I do to make the turkey brown nice.

As far as gravy is concerned, BUY it is a glass jar at the grocery store. It will remove all last minute stress from your mind. Homemade is best, but with limited kitchen resources, canned will be fine. Thanksgiving doesn't have to be gourmet.

Browning: Slather BUTTER all over the turkey before you put it in the oven. Baste it regularly.

Are you having trouble getting it to brown in the roaster??? Hmm, that's strange. Don't add moisture to bottom initially, brush bird with butter then roast for awhile, dry. Later start adding the moisture. Maybe you've had too much water in the base it is steaming.

As for gravy.......cheat. The day before make chicken gravy from a roux and chicken stock in a box (absolutely the lowest sodium you can find). Add poultry seasonings and a splash of white wine. Next day when you make the gravy from the roaster gleanings, add this already made stuff.

If you are strapped with that little a space to cook in, as you've indicated, I totally agree with gg, buy the best quality gravy in the jar (3 12 oz. jars should do, with leftovers) that way, you can also "doctor" it up to your liking, adding some white wine, marjoram, black pepper or whatever you like......that way, you don't have to bother with making it from scratch, as there is enough stress during Thanksgiving....."Doctoring" a jarred gravy and microwaving it at the last minute is just one less thing to worry about........
