how to serve ice wine?

Just re-cork it and refrigerate it. We generally have a dessert wine in the fridge, Ice wine or Noble wine or Muscat. Unlike other answerers responded wine with high residual sugars last quite well for many days even weeks after opening.

Ice wine is served in 2 ounce portions in small liquor or sherry glasses. Although recently attempts have been made to design a glass to showcase the uniqueness of icewines any small glass will do. A single serving after a meal with a coffee and dessert in just perfect. No need for seconds.

I personally don't think ice wine should be stored. It is a very delicate wine and I wouldn't want to risk wasting it. There are no bubbles in ice wine, so you should be able to keep it for a day or two if you put the cork back in it and store it in the fridge as you would any other wine.

wine only has a "opened shelf life" of 3 days usually to keep full flavor, with Ice wine I would personally just drink it all to not risk the wine going flat

Just drink it...Ice wines usually come in small enough bottles that this shouldn't be a problem...A lovely way to end a meal!
