My sister is a chef. She would scream if she ever saw anybody go near a steak with something sharp. She says when you poke it all the juices will run out an you will ruin it.
She did have this method of testing the steak where if you put the tip of your index finger and the tip of your thumb together, and poke at the firmness of the part of the palm of your hand right at the bast of your thumb, this is the way a blue rare steak will feel. Thumb to middle finger, rare steak. Thumb to ring finger, medium steak. Thumb to pinky finger, well done steak.

With a steak that thin the worry is more overcooking than cooking to correct temp.

Are you talking about to tell if it is done? You should be able to tell just by looking at it.
