It is the green skin that is bitter, if you blend the aloe vera with its green skin on, the juice tastes bitter. I only eat the transparent jelly like raw aloe vera fresh and I like the big thick ones (about 20 inches for 1 truck and about 1/2 inch thick, see below photo). Firstly, I chop the bottom part then trim the 2 edges of the leaf, cut horizontally into 3 inches in length, peel the green skin off with knife (like how you fillet a fish) and you would get the jelly like fresh which is almost tasteless, you can put this sticky jelly aloe vera fresh into blender or just eat it raw with fresh fruits. I sometimes cut the aloe vera fresh into small cubes, mix a bit honey and put on my green salad or fruit salad.

You may rub your elbows, hands, face with the green skin (with the jelly side of course), it is very good for skincare.
