That really depends on what you are cooking.
Meats are usually beautiful when evenly browned.
Vegetables -- you want them as close to their original raw color as possible.
Pastries/Baked Goods -- well, bread and pies you want a nice light shade of brown and I think that applies to anything that won't get a coating/icing. However, cakes, cupcakes, etc... well, I think the best color depends on the season and the holiday (if applicable). For Valentine's Day, red frosting or red sprinkles is totally acceptable --- but if you brought these to a funeral; no no no. So, here is where your creativity can shine!
One year, my Grandma made the turkey in a covered roasting oven (kinda' like a big crock pot). I'll be the first to say, that was one of the *juiciest* and *tender* turkeys I ever ate! HOWEVER, because she kept it covered all the time, the skin on the turkey never browned. It came out white. It looked so disgusting!

When a single dish, anything vibrant like the color of a green pepper for example. Contrast is always very appealing also.
White rice, golden brown roasted chicken breast with a sprig of Rosemary on tope and red bell Peppers stuffed with cream cheese on the side.
This is a nice example of using nice contrast of color to make a dish appealing. As they say, you eat with the eyes first!
