Because they start cooking from the bottom and sides first. As they start rising, the last part to cook only has one way to go and that's up.

What I like to do is use a spatula to pull batter away from middle towards the edges making a sort of well. Then when it bakes, the top stays more even.

The center ends up with more heat and has more moisture than around the edges!
