What's the best side-dish using Yams ?
I don't really want to roast the Sweet Potatoes, I just want to open up a can of Yams and add stuff.
Any ideas?

Bake them in the oven in their skins just like potatoes. Peel before serving, they will be sweet tasting and have a wonderful texture. No need to add anything.

HAWAIIAN YAM BAKE

Ingredients:
8 large Sweet potatoes or yams; peeled and cut into 2-inch chunks
2 cups Pineapple chunks
1 cup Banana; sliced
2 cups Hearts of palm; cut into 2-inch chunks
2 cups Tempeh; cut into 1-inch chunks
2 cups Dried lentils 3 cups Vegetable stock
1/2 cup Honey or other natural sweetener
2/3 cup Prepared spicy mustard
1/2 cup Cider vinegar
Cooking Instructions:
Preheat oven to 250 degrees F.

Combine all ingredients in a large roasting pan or casserole dish. Place in oven and bake, covered, for 2 hours. Stir occasionally and serve hot.
Additional Comments:
For a sweeter taste, use apple juice to replace 1/2 of the vegetable stock.

APPLE-MALLOW YAM BAKE

2 apples, sliced
1/3 cup chopped pecans
1/2 cup packed brown sugar
1/2 tsp. cinnamon
2 17-oz. cans yams, drained and cut in pieces
1/4 cup butter
2 cups miniature marshmallows

Toss apples and nuts with combined brown sugar and cinnamon. Alternate layers of apples and yams in 1 1/2-quart casserole. Dot with margarine. Cover. Bake at 350* for 35-40 minutes, until apples are tender.

Sprinkle marshmallows over yams and apples. Broil until lightly browned, watching to avoid burning. 6-8 servings.

Okay this may sound really difficult -- but it taste really good!
Firs grease the pan with butter. Boil the yams until they are soft [ the knife goes all the way through with ease] slice the yams and place them in baked dish. Make sure to layer
Butter in the pan, place first layer of yams, then on top place butter [use the squeezy butter its easier], vanilla, brown sugar [ample amount] and pancake syrup then place another layer of yams and repeat the cycle.
It tastes really good -- try a small dish before thanks giving.

CANDIED YAMS


INGREDIENTS
1 (29 ounce) can sweet potatoes
1/4 cup butter, cut into pieces
1/2 cup brown sugar
1 1/2 cups miniature marshmallows

DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C).
Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
Cover and bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.



THANKSGIVING YAMS


INGREDIENTS
2 (29 ounce) cans sweet potatoes
2 tablespoons butter
1 tablespoon lemon juice
1/2 (16 ounce) package gingersnap cookies
1 (16 ounce) package miniature marshmallows

DIRECTIONS

In a medium saucepan over medium heat, mix the sweet potatoes, butter and lemon juice. Break the gingersnap cookies into the mixture. Stirring occasionally, cook until thick, about 15 minutes.
Cover the mixture with desired quantity of marshmallows. Remove from heat and cover 5 minutes, or until marshmallows have melted. Serve warm.

If you want them to be the best, you have to bake the potatoes yourself. Then just butter a pan, mash the potatoes in the pan, sprinle with brown sugar, pecans and marshmallows. Bake at 350 for about 30 minutes. This is the best recipe I've tasted and it is very simple and not runny.

"Candied Yams or Sweet Potatoes" - 4 to 6 servings

1 (16 oz.) can sweet potatoes; cut into 1/2" slices
1/2 cup brown sugar (packed)
3 tbsp. butter or margarine
3 tbsp. light cream or milk
1/2 tsp. salt

In medium skillet, combine brown sugar, butter, cream and salt; cook over medium heat, stirring constantly, until smooth and bubbly. Add sweet potato slices; stir gently until glazed and heated through.


"Sweet Potato Mallow" - 4 servings

1 (16 oz.) can sweet potatoes
1/2 cup sour cream
1 egg yolk
1/2 tsp. salt
1/4 tsp. mace
3/4 cup miniature marshmallows or cut-up large marshmallows

Heat oven to 350*. In small mixer bowl, combine sweet potatoes, sour cream, egg yolk, salt and mace; beat on medium speed until smooth.
Pour sweet potato mixture into buttered 1-quart casserole; top with marshmallows. Bake 30 minutes or until marshmallows are puffed and golden brown.


"Praline Sweet Potatoes" - 2 servings

1 cup mashed sweet potatoes
2 tbsp. milk
1 egg yolk
1/4 tsp. salt
Dash pepper
1/4 cup packed brown sugar
2 tbsp. butter; melted
2 tbsp. corn syrup
2 tbsp. chopped pecans

In a small mixing bowl, combine the sweet potatoes, milk, egg yolk, salt and pepper. Transfer to a greased shallow 2-cup baking dish.
In a small microwave-safe bowl, combine the brown sugar, butter and corn syrup until blended; cover and microwave on HIGH 1 minute or until sugar is dissolved. Spoon over sweet potatoes; sprinkle with pecans. Bake, uncovered, at 350* for 20-22 minutes or until knife inserted comes out clean.

slice them put them in a roasting pan. melt half cup butter and add half cup brown sugar. sprinkle on potatoes and season with jerk spice. bake for 45 minutes on 350.
