I am trying to eat more healthful meals. I threw out my microwave recently, and I even purchased a pan grill so I can grill more of my food instead of frying it. So I am looking for some easy 30-45 minute meals that are healthful. Recipes and links would be appreciated.

While it is true that I no longer have a microwave, I do have a convection oven that I put in it's place. During the summer I always used the excuse that it was to hot to use my oven, and I would microwave crap for dinner, now that option is no more. Moreover, In all of my years cooking I never steamed veggies in the microwave or a potato. I don't need to have everything grilled, I was just including a new piece that I purchased for my kitchen.

but you know you can try veggie kabbobs
all you need are cucumbers, red peppers yellow peppers and some chicken
dice the cucumbers chicken and peppers into one inch sized pieces
then you poke it through the skewer and then grill it
yum
try other vegies like brocoli
just make sure they aren't soft stuff

I can't believe that you threw out your microwave believing that you could eat healthier by just using a grill! Whatever is wrong with nuking a bake potato? Steaming veggies, or cooking rice and Bulgar ? Grill away, but you will get tired of it and you will find yourself using alot more time in the kitchen than before.
That being said, some ideas:
Grilled chicken and grilled potato spears with grilled zucchini.
Brush olive oil and seasonings over all and grill till done to taste.
Fish, Shrimp, hamburger patties, steak, grilled onions and mushrooms. These all work well. Shish kabobs, also.
(Things like broccoli and asparagus won't grill well--too woody)

Do you like fish? Fish cooks so quickly and is easy to prepare. Try your favorite "meaty" fish (salmon, sword, mahi mahi, tuna etc) and coat it with a sauce of low-fat mayo and if you like mustard. The sauce keeps the fish moist and has an excellent taste. You can add all kinds of stuff to the low-fat mayo. For salmon, you might try mayo/dill. Sword fish or Grouper, try mayo/cajun spices. Tuna, mayo/wasabi. This preparation is best made under the broiler.

Also, super easy -- boneless, skinless chicken breasts marinated in Italian Dressing. Any Italian Dressing will do! You can do that on the grill. Actually, the Italian Dressing marinade works with beef and pork, too.

For veggies, grilling them gives an awesome taste! Toss desired veggies (onion quarters, sliced bell peppers, sliced summer zucchini, mushrooms, asparagus, etc) in just enough quality olive oil to coat (it doesn't take much). Season if you want (Lowry's, Garlic, etc). Then grill! The taste is awesome; a nice change of pace; and I find they don't need butter!

All these suggestions will work with either a low-fat or low-carb diet.
