It depends on what your project is. If it's a formal paper, then you create a bibliography page for the source's full citation--no matter how few or how many you have.

If you're not writing a formal paper, you may be able to get away with an in-text citation. For example: "John Doe states in his book, THE HISTORY OF DEER, that deer are 'blah blah blah yadda yadda yadda' (115). He also says that road-killed deer add a nice touch to homemade stew (123)."

If you're not sure which one to do, I'd advise you to go with doing a bibliography page (or Works Cited page, or References page, or whatever your citation style calls it). It's better to go overboard in citing your quotes than to be accused of plagiarism.
