CREAMY HAWAIIAN SALAD
You can use this for your fruit frosting (cake). All you have to do is, take your potato smasher and smash the final results of this recipe until smooth. You will then see what I am speaking of.
A mixture of fresh tropical fruit is complemented by a sour cream dressing in this salad.
Preparation time: 15 min
Yield: 6 (3/4-cup) servings
1/2 cup walnut halves
1 cup LAND O LAKES® Sour Cream
1 (20-ounce) can pineapple chunks in juice, drained
2 stalks (1 cup) celery, thinly sliced
1 medium (2/3 cup) banana, sliced
1 medium (1 cup) papaya, peeled, pitted, cubed
1 tablespoon sugar
1 tablespoon lemon juice
Toasted coconut, if desired
Gently toss together all ingredients except toasted coconut in large bowl. Sprinkle with toasted coconut. Serve immediately

You can buy cake fillings already made and put in a can in the baking aisle of your grocery. I like Almond and cherry the best
But to make fruit fillings on your own take 2 cups of fruit (strawberries, cherries, hulled and pitted)
1.5 cups water
1 cup sugar
Bring sugar and water to a boil. Add the cut up fruit. Simmer for about five minutes.
2 tablespoons corn starch mix in quarter of a cup of water
Add the cornstarch slurry bring to a boil for two minutes take off heat and cool until you can spread on the cake sides.
Can add a couple of tablespoons of liqueur, rum, or brandy to the mixture after you take it off the fire

I frost and fill cakes with flavored buttercream. When i want to fill a cake with fruit I spread a layer of buttercream and then place fruit on top of buttercream. If it's a berry such as raspberries I will puree and strain the berries and fold them into prepared buttercream.

if the cake is also going to be decorated with frosting, i would personally though, not put frosting in the centre. i would spread some smooth apricot jam (jelly) on the bottom cake and then place the top cake on top of that. the flavour of the apricots detracts a bit from the sweet frosting on the cake and is delicious. the same with a jelly roll. i would put smooth apricot jam in instead of red jelly

I use jam mixed with icing in the middle of my cakes. I just made one this evening to take to a potluck and used strawberry, but you can also use others, raspberry, peach, etc i add about 1/3 of a cup to the icing.

1/2 ts unflavoured gelatine
1/2 c fresh juice
2 c light whipped topping
1 c vanilla nonfat yoghurt
Heat juice and gelatin together in saucepan until gelatine melts. Remove from heat and let cool. Gently fold whipped topping into juice-gelatine mixture using a wire whisk. Chill until spreadable. Spread on cake, and serve sliced.
