Cheese-Filled Mushrooms
1 1/2 pounds white mushrooms
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
3/4 cup mayonnaise
Crumbled cooked bacon, to taste (optional)
Preheat oven to 375 degrees F. Lightly grease a large cookie sheet; set aside. (If desired, line cookie sheet with aluminum foil to save on cleanup.) Wash mushrooms thoroughly; dry and remove stems, hollowing out a hole where the stem was attached to the mushroom. Set aside. Mix together cheeses, mayonnaise and bacon (if using). Pack the center of each mushroom with a mound of the cheese mixture. Arrange mushrooms on cookie sheet. Bake until cheese is browned and mushrooms are shiny, about 20 minutes. Mushrooms may be stuffed and refrigerated ahead of time, then baked as needed.
Veggie Pizza
1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz. can sliced water chestnuts, drained and chopped
Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned. Remove from oven and allow to cool. Combine sour cream, mayonnaise and dry dip mix and spread over crust. Place vegetables over dressing and top with shredded cheese. Refrigerate until ready to serve. Cut into squares before serving.

Mussels vinaigrette
2 lbs mussels
1/2 C olive oil
3 T red wine vinegar
2 tsp. Dijon mustard
2 shallots, finely chopped
3 T parsley, finely chopped
2 T capers
salt and pepper to taste
lettuce leaves for garnish (I like to use butter lettuce)
Serves 4 to 6 as an appetizer
After cleaning mussels, place in a large pot with a tightly fitting lid and do not add any liquid or seasoning. Cover the pot and cook over high heat for 5 to 6 minutes, shaking the pot occasionally. Remove from the heat and allow to cool enough for you to handle the mussels. Remove the from the shells, and discard the shells as well as any mussels that did not open.
Whisk together the oil, vinegar, mustard, salt, and pepper. Add the mussels and the remaining ingredients, stirring gently to combine. Refrigerate for at least 1 hour, or until ready to serve. Serve on a bed of lettuce leaves, garnish with additional parsley and lemon slices. Enjoy!

Tortilla chips and salsa cheese dip
BBQ sausages (or can use hotdogs cut into 1" pieces)
Taco Cups- I made these for 1st time for daughter's party and everyone talked about how good they were. Recipe:
I bag Tostitos scoops (can use Frito Scoops)_
1 can chili with no beans
2 ounces of taco seasoning mix
Finely chopped parsley (about 2 to 3 ounces)
1 16 oz. container of sour cream
Shredded Mexican blend cheese
Mix the taco seasoning with the sour cream and set aside. Warm the canned chili. On a cookie sheet, fill each tostido scoop with approx. 1/2 tsp of the canned chili. Sprinkle cheese over each cup. Broil in oven 5 minutes or so until the cheese melts. Remove from oven and put a dollop of sour cream onto each cup and sprinkle with parsley. These are really good.
Hint: I found it easier and less time consuming to pipe the sour cream onto the cups. If you do not have a piping bag and tip, you can put the sour cream mixture into a plastic bag and snipped a small corner and squeeze the sour cream onto each cup this way. If you try this, I hope you enjoy it.

pigs n' a blanket, veggie tray, mini pizzas, chips n' dip, fruit bowl, onion rings, buffalo wings, potato wedges, mozzarella sticks, kabob with chicken,favorite veggies, chicken again and favorite bread in the very middle. I am having a party this weekend and I want o serve stuff you can walk through the kitchen and grab and eat ion the go so the set eating time thing does not slow down the party!

Another Wrap it in bacon suggestion - Try wrapping dates in bacon, about 1/3 a strip. Secure with a toothpick, and heat in a 375 degree oven for about 15-20 minutes. Drain on paper towels, serve with a dipping sauce or alone. Sauce -- stir some prepared mustard into some apple jelly, heat slowly over low heat. About 1/2 cup jelly to 1Tbsp mustard, adjust to your taste.

I so love a good bruschetta. I found you my favorite recipe I hope you try it out you will like it. This is a great garlicky bruschetta recipe. Serve it on slices of French bread.
Original recipe yield: 2 cups
INGREDIENTS
2 tomatoes, cubed
1 teaspoon dried basil
4 tablespoons grated Parmesan cheese
2 tablespoons olive oil
1 clove garlic, crushed
seasoning salt to taste
ground black pepper to taste
DIRECTIONS
In a medium bowl, mix tomatoes, dried basil, Parmesan cheese, olive oil, garlic, seasoning salt and ground black pepper. Cover and chill in the refrigerator 8 hours, or overnight, before serving.

Try 1/2 a bacon slice wrapped around a whole canned water chestnut, held together with a toothpick and broiled in the oven. Incredibily easy to make, smells delicious, and I have never have had one left over.
