Its pork fat, rolled in bacon with a pat of butter then deep fried in lard you serve it with a side of pork rinds. with clarified butter for dipping.

Butter gives a nice complimentary flavor to almost everything and even though it is higher in fat than most margarines /almost butters etc.; a little can go a long way. When you consider the chemicals that are in most margarines and are used to make them, butter is a much more appetizing option. By the way, margarine was originally invented as a bug bait- fly I believe and it is one atom awya from being plastic. Still Paula Dean doesn't know what she's doing?

She likes using butter a lot. And it does take good. But sometimes cooking with butter ain't so great cause it burns faster and easier.

It's in the rule book for true Southerners.........we must use butter. If not, the Creole and Cajun food police will confiscate your un-buttered creation and dispose of it properly......not even a possum or coon would eat leftovers if they weren't slathered in butter.......
