YOU HAVE to take it easy. Your Q is written as though it has to be done today. You didn't get the best cut of meat. You didn't get the worst cut, either. You have several options: You can do it in a crock pot or slow cooker. Just follow the directions for pot roast. You can do it in the oven. If you do it this way, you should use a meat thermometer. Use salt, pepper and garlic or garlic powder. You might also want to consider adding a couple sticks of celery, some raw onion and a couple carrots to the pan. Put some water in the roasting pan. This helps to make a delicious natural gravy. It all depends on how rare [or well done] you prefer your meat. At 350 degrees F. you have to figure about 8 to 10 minutes per pound. A meat thermometer placed in the thickest part of the roast should take the guesswork out of cooking. You can slice it very thin and do it on the stove top - just like you were going to make Swiss steak or Philly-style steak sandwich. Thanks for asking your Q! I enjoyed answering it! Happy Halloween? Its 11/15 dear.
Okay the rule of MEAT is "low and slow"
Get aluminum foil, line the pan, enough to wrap it like a tent on top.
Score the meat XXXXX across the top of it and bottom of it.
Sprinkle some McCormick's Roast or Stew package over it, get it into those grooves. Place it into the aluminum foil pouch.
You want to peel and cut in quarters raw potatoes and put them around that roast. Get some mini carrots and drop them in the spaces between. Add what ever veggies you want, onions, celery, garlic, rosemary. what ever you like. Just make sure that if its a wet veggie that it doesn't overflow the pot. Potatoes will absorb the extra salt flavors, so you get a better over all flavor.
Then close up that aluminum foil.- loosely on top.
Put the oven (preheat to) on 300 and cook for 5-8 hours. Meat falls apart when done or is tender (cut it)
OR the best way!
My favorite way-,CROCK POT- do all the food prep as above except just put it into the crock pot then add a cup of water at bedtime and put it on LOW and go to bed. Its perfect in the morning, if you want it more tender, then add more water and let it cook all day too. 8-10 hours is perfect. It literally is falling apart and floating in its own juices. YUMMY!
That juice can be poured into a heated frying pan, slowly add flour and corn starch to thicken it up for gravy! That is just wonderful. I'm hungry- whens dinner!

I just sprinkle a little garlic powder and put a little water in the bottom of the pan and cook it 2 1/4 to 3 1/4 hours for a five lb roast. Good luck!!

Our favorite is called the No Roast Roast Beef. It requires a roast of at least 5 pounds though as anything smaller will most likely turn to charcoal. (Trust me it's worth it - makes great sandwiches later.)
Use a good cut of mean such as sirloin tip, etc.
Prior to cooking, let meat sit out 1-2 hours in order to get it close to room temperature. Heat oven to 500F for 20 minutes. Drizzle oil over roast and sprinkle with salt and pepper. Cook roast at 500F 5 minutes per pound then turn off oven and WITHOUT OPENING THE OVEN DOOR set timer for 2 hours. The roast should be perfectly cooked. Well done on the outside portions and medium rare-rare on the inside.
At serving time if it is not as hot as you would like (gas ovens don't hold the heat as well as an electric) you may need to turn the oven back on to 500F and cook for an additional 10 minutes to bring the temperature back up.
We like it with horseraddish.

Roast Beef with Garlic and Thyme
A flavorful roast beef recipe.
INGREDIENTS:
1 tablespoon butter, room temperature
1 teaspoon finely grated lemon peel
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 clove garlic cut in half
2 to 3 pounds beef roast - eye of round or rump roast
thinly sliced red onion and tomato slices for garnish
PREPARATION:
In a small bowl combine butter, lemon peel, thyme, salt, and pepper. Rub garlic halves over surface of beef roast. Spread butter mixture over roast, coating thoroughly on all sides. Place meat on rack in a shallow roasting pan.
Roast at 450°, uncovered, for 20 minutes. Reduce temperature to 300°; roast beef about 20 minutes longer for medium well. A meat thermometer should register about 140°. Remove roast from oven, cover loosely with foil, and let stand for 10 minutes before slicing. Place slices on a serving dish, and place onion and tomato slices around the edge. Serve immediately. Roast beef serves 6 to 8.

Hawaiian Pot Roast Recipe

Ingredients:
4 pounds Beef chuck cross rib pot roast, boneless
2 tablespoons Cooking fat
Salt
Pepper
1/4 cup Soy sauce
1/2 cup Pineapple juice drained from tidbits
1/4 teaspoon Ginger
1 medium Onion; thinly sliced
3 Celery stalks; cut 1-inch diagonal pieces
13 1/4 ounces Pineapple tidbits
4 ounces Mushroom slices
1/4 cup Water
1 tablespoon Cornstarch
Directions:
In a Dutch oven, or large pan with a tight-fitting cover, brown meat in fat.
Season with salt and pepper and remove from pan. Pour off fat drippings. Add soy sauce, pineapple, juice, ginger, and onion; mix well. Return meat to pan. Cover and simmer for 2 1/2 to 3 hours, or until done. (Or cook in a 325F oven for same amount of time.) Turn meat once to cook it evenly throughout. during the last 20 minutes of cooking, add celery, pineapple tidbits, mushrooms, and juice. When meat is done, remove and keep warm. Skim fat from liquid. Mix cornstarch in water. Add mixture slowly to liquid in pan. Bring to a boil, stirring constantly, and cook until thickened, about 3 minutes. Taste sauce and correct seasoning, if necessary, with salt and pepper. Slice meat, and serve sauce separately.

rinse it well, throw it in a Crockpot with a can of cream of chicken (yes, chicken!), soup, a little garlic, ital seasoning, and a little water
small roast=small can of soup
big roast=big can
cover, cook on high untill roast starts to break apart, add some mushrooms if you like, cook on low another 45 mins to hour

I put mine in a electric skillet on 200 with some potatoes cut into, carrots and muchrooms. Cut up a small onion put it on top of the roast and top with cream of mushroom soup and 1/4 cp water and slow cook half a day till roast falls apart. Yum yum and you don't need anything else, supper is done.

season with salt and pepper and roast in pan in hot oven, turning it over to get an even browness.
Baste it with its own juices and place a pan of hot water under the beef so that it doesn't dry out!! Good luck

Get you a Pan and place the Beef in the pan and set your oven at 350 degrees.
Sprinkle some season salt on it and thats all.
Put some Potatoes around it and carrtos and let ir rip
