I would skip the butter altogether and bake the garlic
Take whole head of garlic(skin and all) and wrap in foil. Drizzle with olive oil. Bake in 350 degree oven for about 15 minutes or unitl garlic is tender.
When cooled, squeeze garlic out of bulbs(comes right out). Put this in a bowl and serve with bread/toast or slather it on whatever you like!
It's delicious and good for you!

Garlic Butter Spread

1/4 c Soft Butter or margarine
1 cl Garlic, crushed


Recipe Instructions:

Stir to combine.
Enough for 8 Bread slices.
Use with any eat or Vegetable filling.

Roasted Garlic Spread

1/2 c Currants
1 lb Cream cheese
1/3 c Brandy
3/4 c Toasted almond, finely
3 Heads roasted garlic -chopped


Recipe Instructions:

This rich cream Cheese Spread takes on a Sweet tone from the addition of roasted Garlic and currants. Spread onto crackers or Bread for a simple hors d'oeuvre, or serve with raw Vegetable pieces. In a medium bowl, macerate (soften by soaking) the currants in the brandy for 30 minutes. Drain well and return to the bowl. Squeeze the roasted Garlic pulp from the heads into a bowl, taking care to remvoe any bits of skin from the pulp. Add the roasted Garlic to the currants, along with the cream Cheese and almonds. using an electric mixer, beat on low speed until all ingredients are thoroughl combined. Season with salt and pepe. Refrigerate for at least 2 hours before serving. Can be refrigerated for up to 5 days.


Roasted Garlic with Olive Oil

1 Head Of Fresh Garlic *
Fresh Rosemary
Olive Oil
Butter
Dried Thyme


Recipe Instructions:

* Prepare one head of fresh Garlic for each person.

Remove the paper skin from each head of garlic. Place root side down in a Baking dish. Make sure Garlic heads are secure so they don't move around during roasting. Drizzle some olive oil over each head. Sprinkle with dried thyme and fresh rosemary. Top each head with butter. Cover and place in a preheated 275øF Oven for 30 minutes. Uncover Baking dish and baste each head with melted butter. Continue Baking for an additional 90 minutes, with regular basting.
This is excellent served as a Spread over fresh French Bread or roasted potatoes.

This is a garlicky wonder that may well be Ligurian or Piemontese. It is something of a cholesterol bomb, but won't do you any harm if you partake in moderation. Also, it is quick, easy, and tasty, and will certainly help keep winter's chill at bay.
INGREDIENTS:
6 ounces (150 g) cured lard (you'll want the kind that is salted and lightly spiced, not something out of a can).
6 ounces (150 g) walnut meats, chopped
5 cloves fresh garlic, minced
Freshly sliced Italian-style bread (or French baguettes)
PREPARATION:
Grind the nutmeats and garlic to obtain a paste. Melt the lard over a low flame (don't let it burn) and add it to the nut-and-garlic mixture, stirring carefully to combine the ingredients. Toast the slices of bread, spread the agliata over them, to make crostini, and serve, with a crisp white wine.

In a food processor chop garlic fine and mix with butter and a little olive oil.

take a stick of country crock/margarine/butter and mince up a couple of cloves of garlic.Mix and play with other spices: sea salt, celery salt, onion powder, etc. You can certainly cheat and use garlic powder.salt instead of mincing the cloves.
