I am serving melon and pears with proscuitto- how can I be sure the fruit will not discolor or get soggy? Lime juice?

Lemon juice---rub the pears with a cut lemon to prevent the flesh from discoloring.

lemon juice, or lime juice should do it. I wouldnt let the fruit set too long though. You should prob cut it up the same day you're going to use it, if you can.

Try asorbic acid powder (vitamin c). Lime juice will work.

use lemon juice, lime might work, but would change the taste.
