I add sausage to the stuffing also. I cook it in a skillet first to get the grease & fat out of it. then I add it to the stuffing.

Bread & Sausage Stuffing
Ingredients
1 Pound bulk sausage
1 Cup butter or margarine
1 1/3 Cups chopped onion
1 1/4 Cups chopped celery
4 Quarts soft bread crumbs
1 Cup chicken stock
1 Tablespoon salt
1/2 Teaspoon pepper
1 Tablespoon poultry seasoning
2 Tablespoons chopped parsley
1 Small jar mushrooms
Instructions
Cook sausage and combine with remaining ingredients. This makes a moist stuffing. For a dry stuffing use dry bread crumbs. Makes enough for a 10 pound bird with enough left over for 5 to 6 stuffing molds.

Yes you do. At least for this recipe.
1 pound Sage or regular ground Sausage
4 large apples, such as Red Delicious, McIntosh or Granny Smith
1/2 cup chopped celery
2 teaspoons salt
8 cups dried, toasted fresh or prepared seasoned bread cubes
1 small minced onion (optional)
1/2 cup milk
Canned chicken broth (optiona but, bestl)
Crumble sausage into medium skillet. Cook over medium heat until lightly browned, stirring occasionally. Place sausage and drippings in large bowl. Core, peel and chop apples into 1/2-inch pieces. Add apples and all remaining ingredients except broth to sausage mixture; blend thoroughly. Bake loosely stuffed in bird or place stuffing in greased 13×9-inch baking dish. Add turkey drippings and/or broth to adjust moistness and bake 30 to 45 minutes in 350°F oven. Leftover stuffing should be removed from bird and stored in the refrigerator separately. Reheat thoroughly before serving.

Cook it first but be warned that sausage meat especially pork when used in stuffing can be dangerous if not treated with caution it should never be reheated and ideally should be removed from the bird when it is cold and kept in the fridge

To tell you the truth you should cook it first, but rite before you put it into the turkey let it cool down some, then add a table-spoon of butter to your stuffing to keep it moisten and that way it would not be so much grease that way. I am a cook and I have done this for a long time, so please try it, I know that you will thank me latter.

This is a good question. You should cook it first crumbly like hamburger. In case you didn't know the stuffing that goes in the bird should be the same temp. as the bird. Hop that I have been some help and have a Happy Thanksgiving.

you can put the sausage in the stuffing raw, and let cook with the turkey, i add pork sausage and mild Italian sausage and other goodies
