This is what I did one Xmas season, I planned a ski trip for Christmas week, told everyone it was my husbands only available week off. Also, because of the expense of the trip, it was our gift to each other, and children, sent other relatives fruit or chocolates. That was the best Christmas ever, no shopping no exhausting dinner. If you can't find a way to get out of town, you could tell one huge whopping lie. "I was shopping at Wall-mart, to buy everyone really great gifts, but I was so exhausted, and over heated from the busy crowd, that I fainted, but the Wall mart employees thought I was drunk, and now I have to volunteer at the homeless shelter, Xmas eve and Xmas day! So sorry go on with out me. If you go with this one, try to keep a straight face.

An really original way would be to kill yourself, then not only do you get out of the Christmas gathering but all future ones too.

Decide to take a short holiday over the christmas period. Just go away for a few days to the beach or something. This way you can tell them you are taking a vacation and they can't argue about why you won't be at their place. This way you are being honest and not lying to your family.

There are no more original excuses left. They have all been used. Many times. Nobody will believe you.
Faked heart attacks, bubonic plague, sick friend that can't use his Vail, Colorado . reservations and gave them to you for free, all over done.
If you do not want to go, you will just have to tell your Mom the truth. Just walk right up to her and say, "Mom, I do not wish to come to Christmas dinner this year." Here are the headlines that we will all be reading on Yahoo! later that day: MAN KILLED BY OWN MOTHER AFTER HE TOLD HER HE WOULD NOT BE GOING TO CHRISTMAS DINNER.
LOL, good luck

If you are single, tell them you have a date of a lifetime with a hot guy and you don't want to miss it and remain a spinster for the rest of your life. Surely they will understand that.

you could volunteer to feed the homeless at the rescue mission, nobody could fault you for missing the family gathering (unless they were selfish and shallow)

Just tell the truth. That works best, then you don't have to invent anything. Be polite, though.
