Even though freshly cooked pasta is best, if pasta is cooked and stored properly it can be OK. Draining the water right away and quickly rinsing the pasta with cold water to stop the cooking process is an absolute must. Lightly oiling the pasta before storing it in an airtight roomy plastic bag or container will prevent the pasta from clumping. The pasta will keep up to six days in the refrigerator.

We all think of how easy it is to cook pasta, but for the people who want an easier way to make a quick meal, this is a very good alternative.

If you are planning to consume the pasta throughout the week, undercook the pasta so that it is firmer than al dente. That way the texture should be right when it is added to the sauce

Ah yes, I have the answer for you.

Portion the pasta the way you want it individual servings, or as a large dish.
After you drain & cool the pasta (when al dente quicky drain in collander and rinse with cold water to stop cooking process).
Once drained spread out on a baking sheet and sprinkle olive oil ( I now use cooking spray).
When lightly coated with oil, put into a ziplock type plastic bag. (do not freeze).
Hold in refridgerator until ready for use. When ready to use boil water to a rolling boil, place pasta in water, turn off heat and let sit 30 seconds to 1 minute. Some times if just one serving I will open bag and heat in microwave for a few seconds.Carry on from there.
Gauranteed to work every time.

Once cooked and drained, add a tablespoon of extra virgin olive oil and mix. Then put it in the fridge in an airtight container and just heat in a microwave when you want to have it...

Please do not do cooking like that. Just eat it plain and fresh. Well, not plain. With sauce.
