Because light reflects off the retina at the back of the eye, showing the blood vessels and can give you red eye. Sometimes light just reflects straight back or bounces back without showing any red-eye.
If there is no light reflected at all and dark shadow appears behind the pupil then you should see a doctor as there is a possibility of losing the sight in that eye.

You already has the answer: because the retina is red .
however why?
Simple: the flash is very close to the lens and will bounce back from the retina (red) and since it is dark, the pupil is completely dilated, giving more room for the red to show.
Many cameras preflash before the actual picture forcing the pupil to react and close, eliminate to certain degree the red eye.
If you want to eliminate red eye try to use a separate flash well above the axis of the lens so it do not bounce back at the lens.

the red-eye effect common in many photographs taken with a flash is simply light being reflected off the retina. The retina is the light-sensitive membrane that lines the inner eye and sends messages to the brain via the optic nerve. Why do the eyes appear red? Because this is the color of the blood vessels that line your retina.

As previously stated, red eye is caused by electronic flash being reflected by the retina. Cats eyes go green. To solve the problem off camera flash is used or red eye reduction by preflashing the flash causing the pupils to contract.
"Potato mashers" , which are flash units on a separate grip, move the flash off axis from the camera lens greatly reducing and often eliminating the effect.

The red color comes from light that reflects off of the retinas in our eyes (from your flash). The smaller your pupils the less red eyes in your picture
