Mix cream cheese (softened), salsa, and cheese whiz together (Not the kind in the can, the kind in a jar). Put it in the center of a big plate, garnish it with some cheddar shavings , a few pieces of black olive, and a few pieces of tomato, and surround it with tortilla chips.
(Mix in equal parts, and make sure cream cheese is soft so it mixes in good)
Or cheese whiz and hamburger with tortilla chips. Both are good.
2 (8oz) jars of cheese per pound of meat. Add a little milk to keep the cheese from setting.

For something a little more upscale you can take a wheel of brie and slice it in half lengthwise, take the top layer off and spread any flavor jelly or preserves (apricot is really good) on the bottom layer, put the top layer back on. Heat it up in the oven until it softens and gets a little warm throughout (watch carefully so it doesn't melt). Transfer carefully to a tray and put crackers all around to dip in to it.
You can also take a log of goat cheese and get a jar of roasted marinated bell peppers and some fresh basil. Put the goat cheese log on a serving tray, arrange the peppers along the sides, snip fresh basil and sprinkle all over the cheese and peppers and drizzle with a little olive oile. Serve with crackers.
You can always go with corn chips and salsa, potato chips and onion dip, or hummus and pita chips.

This is one of my favorite dips, especially at xmas time (The colors are really festive)
Mix 8 oz softened cream cheese with a couple of spoonfuls mayo. Spread this mixture in a nice shallow dish.( a glass one if you have it ) Next cover with a layer of your favorite ready-made pesto sauce. Cover the pesto layer with a layer of chopped oil-packed sundried tomatoes. Lastly cover the tomato layer with a generous amount of lightly toasted pine nuts. I don't really measure the ingredients for this dip because the amounts you need depends on your choice of serving dish. Can be served with your favorite dippers or breads, such as thin bagette slices, crostini, crackers, flatbreads etc. My favorite is tortilla chips because at Xmas I can usually find the festive red and green ones. It makes a really appealing presentation at a party! This is also a great appetizer because it can be made a day ahead.
(oh, don't forget to drain the oil off the tomatoes!)

spinach dip
1 10oz package frozen spinach, chopped
1 cup mayonnaise (lowfat OK)
1 cup sour cream (lowfat OK)
1 tin water chestnuts, drained and chopped
garlic powder to taste
1 package powdered vegetable soup mix (I like Knorr's Leek Soup)
1 loaf round pumpernickle bread
Cook spinach on high for 3-4 minutes. Cool and press out all moisture.
Mix all ingredients (except bread) and let stand in refrigerator for 1 1/2 to 2 hours.
Scoop out the center of the bread to form a bowl. Serve with sauce in the bread bowl, vegetables (mushrooms, carrots, celery...) and the scooped part of the bread (cut into 1 inch cubes).

1/2 c Mayonnaise
2 c Sour cream
1 pk Knorr french onion soup mix

Yield: 30 appetizers
2 lb Very Fresh Mushrooms
8 oz Softened Cream Cheese
4 1/2 oz Can Deviled Ham
2 tb Chopped Stuffed Olives
Onion Salt
Garlic Salt
Dry Mustard
Pepper
Pimento
Rinse mushrooms well. Remove the stems. Mix the cream cheese, deviled ham, chopped olives and the seasonings. Spoon or pipe the cheese mixture into the mushroom caps. Garnish with pimento. Place appetizers on platter, wrap and refrigerate until serving time.
These party appetizers may be made a day in advance.

Easy, Easy Ribs
3 1/2 lbs Spareribs (cut into individual pieces)
Salt, pepper
2 c Water
Garlic salt
8 oz bottle Russian salad dressing
6 oz Pineapple juice
Sprinkle ribs with salt and pepper, place in slow cooker with the 2 cups water and cook 6 hours or until tender, drain away the water.
Arrange the ribs onto an oven broiler pan and sprinkle with garlic salt. Combine the salad dressing and the pineapple juice together, and brush 1/2 of the mix over the ribs. Broil until browned and then turn over, brush with remaining sauce and broil until browned.

This one is super-easy.
Buy a long, thin eggplant. Rinse it and slice it into long, thin slices. Lay them on a non-stick baking sheet or a piece of oven paper and roast until they're soft and bendy (flip if you need to). Time and temperature isn't important, just let them get soft.
While the eggplant is roasting, mix up some ricotta and feta cheese with some Italian seasoning.
Take the eggplant from the oven and let it cool. Then, spread the cheese/herb mixture all along the eggplant slices. Open a jar of sundried tomatoes or roasted red peppers (oil-packed is easy) and lay one tomato/pepper strip at one end of each eggplant strip (parallel to the SHORT end). Then, just roll it up!
Voila! Easy, cheesy, unusual!

"Hidden Valley Pinwheels" - 3 dozen
1 (1 oz.) packet Hidden Vally Original Ranch Dressing Mix
2 (8 oz.) pkgs. cream cheese; softened
2 green onions (scallions); minced
4 (12") flour tortillas
1 (4 oz.) jar pimento
1 (4 oz.) can diced green chiles
1 (2.25 oz.) can sliced black olives
Mix first 3 ingredients; spread on tortillas. Drain vegetables and blot dry on paper towels. Sprinkle equal amounts of vegetables on top of cream cheese; roll tortillas tightly. Chill at least 2 hours. Cut rolls into 1" pieces; discard ends. Serve with spirals facing up.
"Potato Skins" - 8 to 10 servings
1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
4 baked potatoes; quartered
1/4 cup sour cream
1 cup Cheedar cheese; shredded
Green onions (scallions)
Bacon bits
Scoop out potatoes and combine with sour cream and dressing mix; fill skins with mixture. Sprinkle with shredded cheese. Bake at 375* for 12-15 minutes. Garnish with green onions and/or bacon bits.

1 can of biscuits (any kind )
1 pkg of little smokey sausages
Heat oven at 400 degrees
Open biscuits, roll dough out a little,take a sausage put on dough,
roll sausage up in the dough.Bake until slightly brown on top.
Serve hot and with various sauces in remkins.
You can insert pepperjack cheese into sausage for a little heat ! Enjoy !!!

Pepperoni chips....mmmmm!
Take however many pieces of pepperoni you need and place them on a baking sheet. Cook them for about 10 minutes or so in a preheated, 400 degree oven. When they're done, you can pat them with paper towels to get rid of some of the excess grease.
Top them with whatever you want....a dab of sour cream with a basil leaf, cream cheese and an olive slice, a small piece of goat cheese with a dab of store bought pesto...get creative!!!

sauteed whole mushrooms.. Great flavor, easy, ...
little bit of oil in a pan. Salt and pepper. Maybe some garlic or onions for flavor (either one is fine or neither). There're awesome!. Stuffed mushrooms are also easy with one more ingredient. Breadcrumbs! But this is a little more time consuming.

Allow some cream cheese to soften, top with pepper jelly and place on a try with crackers.
Bacon wrapped water chestnuts...cut uncooked bacon in half, wrap around water chestnut and secure with a toothpick, broil until bacon is cooked.
