As far as taste, nothing is different. It's only a difference in the size of the clams in the can. Chopped has bigger chucks. Minced is very, very small pieces.

Chopped is really chunky and minced is almost mush.

I think "mush" is an exaggeration, but yeah, chopped has bigger pieces.
