When my kids were growing up, I always put a tray on the table with a couple kinds of cheese, dill pickle spears, olives, and deviled eggs. Now that it's just me...and occasionally one friend, it's just a pot of chili and a skillet of crusty Southern cornbread.

Cornbread, I never eat chili without cornbread, it would be a sin!
This is the recipe I use, but you can also get a box of Jiffy cornbread mix at your market, and it's under a $1.

CORN BREAD:

1 c. yellow cornmeal
1 c. flour (all-purpose)
1/4 c. sugar
1/2 tsp. salt
4 tsp. baking soda
1 egg
1 c. milk
1/2 c. shortening (+2 tbsp.)

Heat oven to 425 degrees. While mixing ingredients, heat iron skillet in oven with 2 tablespoons shortening in the skillet. Sift together dry ingredients into bowl, then add egg, milk, shortening. Beat until smooth but don't overbeat (about 1 minute). Pour batter into hot skillet. Bake 20-25 minutes at 425 degrees.

You can make a cornbread stuffing also.

Cornbread is great with chili.

But I often do quesadillas too:

I just take tortillas and load them up with shredded cheese and whatever else you like (i.e. green onions, black olives, green chilies) put them on a cookie sheet and put in the oven until the cheese melts and they crisp up a little. Then cut in wedges.

I like grilled cheese with chili but corn, corn bread, and chips w/ cheese all work too.

Potatoes sound good too. I love chili cheese baked potatoes or fries.

I like toasting small pita triangles in the oven and using them to dip into the chili. Tostitos work well too!
