Pancakes
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup milk
2 tablespoons cooking oil

In a medium mixing bowl combine all of the dry ingredients. Make a well in the center of the mixture and set aside.
In another mixing bowl mix all of the wet ingredients with electric mixer or a wisk. Add the wet mixture all at once to the dry mixture and stir well.
Pour batter onto preheated lightly greased griddle and cook.
Prep: 10 minutes Cook: 4 minutes per batch
Makes: 8 to 10 4 inch pancakes

"Pioneer Pancakes" - 4 servings

1 cup all-purpose flour
1 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg
1 cup milk
2 tbsp. salad oil
Butter
Maple syrup

1) In medium bowl, combine first 4 ingredients. In small bowl, beat egg slightly; stir in milk and oil. Add to flour mixture and stir just until flour is moistened (batter will be lumpy).
2) Over medium-high heat, heat 10" skillet or griddle. Brush lightly with additional oil.
3) Using scant 1/4 cup batter for each pancake, pour batter onto hot skillet, making a few pancakes at a time.
4) Cook until surface bubbles burst; edges will look slightly dry. With pancake turner, turn and cook until underside is golden. Repeat with remaining batter, brushing skillet with more oil as needed. Serve with butter and syrup. Yields 12 pancakes.

Buttermilk pancakes

1 3/4 c.to 2 c. flour
2 tsp. baking powder
1 tsp. baking soda
2 tbsp. sugar
2 eggs
2 c. buttermilk
3 tbsp. melted butter
mix in order given using a whisk. preheat non stick griddle or fry pan add by ladle full...flip them once you see bubbles breaking on the top.
