I'm going to be making 2 pecan and 2 pumpkin pies for T-day. I wanted to make them this Saturday, and as you probably know T-day is next Thursday. Will those pies make it till then, or should I make them closer to T-day? It's hard when I'm working during the week to bake. Help?

I know what you mean. I don't have any school the day before Thanksgiving, and that's when I'm making all my desserts. I'm making 6 of them.
Umm, The pecans might be able to hold up until then, because there's practically no liquid, but where the pumpkin is more moist, the crust would be soggy.
So, the pecans are good but the pumpkins I'd do closer to T-Day.

well, technically 3 days, not so technically no longer than 5, make sure to cool pies completely then to prolong their life, freeze them. Pre bake the crust for about 12 minutes, especially for the pumpkin, pre bake until golden then add filling. Again cool pies completley before freezing and put them in the fridge Tuesday or in a warm oven while having Thanksgiving dinner, happy baking!!

Personally I would cook them Tuesday or Wednesday evening -- yes, I know you work, but you have chosen two of the easiest pies known to man to make! You can mix them up and pop them in the oven in about 30 minutes. Have your crock pot on the same day so you won't have to cook dinner. While pies are in the oven, eat dinner and enjoy a good glass of wine with it. Happy T-Day!!

Sure, girl, go ahead and bake them on Saturday, and here is the trick:

FREEZE them until early Thursday morning, or set them out to thaw, on Wednesday evening, to be enjoyed by your lucky family the next day.

But, yeah, go ahead and bake them when you need, when U want. Freeze/thaw.

yes, Saturday is fine, the pies will be fine until Thursday. the problem i see, is trying not to eat them before t-day.

In my house---2 days! Forget about Saturday.
Make them on Monday or Tuesday.

Sure!! Make em today if you want. Just freeze until T-day and take them out early that morning.
