get a 2 pk of stuffing mix..spray the bottom and sides of a long ,square pan,with cooking spray..sprinkle 1 pkg of the stuffing on the bottom of your pan,makin sure you've covered the bottom of the pan.then,you will need 2 reg. size cans of cream of chicken soup.open 1 can,and try to spread evenly over your first layer of stuffing,then fill the soup can with water,and pour over the soup and stuffing..take about a pound and a half of boneless chicken,cut up into small peices,place evenly over first layer..next...place any kind of vegetable(i usually get the winter mix of cauliflower and brocoli)and spread it over chicken..then..take your 2nd pkg of stuffing mix and can of soup ,and repeat the first few steps...cover pan with foil,and bake for about an hour an a half, at around 300*...it's really good,easy to make,and ya have your meat,veggies,and stuffing,all in one..try it..you'll like too... :)

Stuffed flank steak.
Take steak, score it both ways accross the grains and beat it with a meat mallot till about 1/4" thick. Make your favorite stuffing and put on top the meat. Roll it up, salt & pepper to taste and bake at 350 for about 30-45 minutes (depends how done you want your meat). I have also done this and put it in a crock pot all day on low with a couple tsps of water in the bottom.

Mine is a homemade cake from scratch with chocolate ganache and butter-cream frosting and to find the recipe go to foodnetwork.com and click on cooking (it is on the top of the page) then go to recipe collections (left side of page) then go to ingredient collections (by the bottom and click on the second recipe from the top on the left side. hope you enjoy. You can make the actual cake from a mix if you want if you dont the actual cake (not frostings) takes about 4 hours. for the icing you should only use half the butter

Risotto with roasted pumpkin, toasted pinenuts and pancetta and rocket (aragula) on top.
Risotto - toast the rice (aborio) & finely chopped onion in olive oil & butter, then add a slurp of white wine. Aaahhh - you know how to make risotto & there's a million basic recepies on the web.
Meanwhile, dice the pumpkin into 2cm cubes, toss it in olive oil & a mix of crushed herbs (sage & thyme are good), then roast for 1/2 hr. Add to the risotto w/ the toasted pinenuts when the risotto is good to go, & top w/ thin slices of pancetta and a handful of rocket. My 3yo likes this as much as we do.

My cabbage rolls are, without a doubt, the best in the west. So good, in fact, my brother BEGGED me to make them to serve at his wedding. Glad I only have one brother cause cabbage rolls for 200 people is something I only do once in my lifetime!

guacamole, artichoke dip, carrot cake (pretty much all baked goods, cakes, cookies, brownies), twice baked potatoes, quesadillas, grilled cheese, pancakes
The artichoke dip is so good:
-1 can marinated artichoke hearts, rinsed, drained well, and chopped
-1 cup mayo
-1 cup mozarella cheese, shredded
-1 cup parmesan cheese, shredded
-3/4 tsp dried dill
-3/4 tsp minced garlic
Mix all ing together and put into a glass pie plate, bake for 30 minutes at 350

I make a great manicotti that has a cheesy spinach filling and red sauce on top. There is never any leftovers with this dish.

I've had friends and family beg for my guacamole. A friend once showed up at my doorstep holding a bag of avocados....so I could make her my famous guacamole.
