i have gotten some fresh jalapenio peppers, and would like to know how to perpare them for canning.

There is really no prep to them except washing. Otherwise just fill your bottles with the peppers, add your hot vinegar brine of your choosing. You can also add a few sliced carrots and onions and peppercorns for flavoring. Cap and process in a water bath canner. Because of the vinegar you won't need a pressure canner.

One tip though - WEAR GLOVES just to be on the safe side. I didn't one year and my hands burned and swelled very badly from the capsicum contained in the chilies even though I didn't cut them open. Just a thought.
