Fresh Tomato, Bacon and Onion Fettucine

Ingredients

4 oz Uncooked fettuccine
3 Slices bacon
1/4 c Chopped onion
1 c (1 medium) chopped tomato
1 tb Chopped fresh basil OR
1/2 ts Dried basil leaves

Instructions

Cook fettuccine to desired doneness as directed on package. Drain, keep warm.
Meanwhile, cook bacon in medium skillet until crisp; remove bacon and drain on paper towels. Reserve 1 Tbsp. drippings in skillet. Add onion; cook until crisp-tender. Crumble bacon; add to onion with tomato and basil. Cook just until heated. Immediately toss with cooked fettuccine. 4 side dish servings; 2 main dish servings.

heres an easy chicken recipe i've found


Ingredients & Directions


1/2 tsp olive oil

1 lb ground chicken breast, skinless -- cooked

1/2 c onions -- chopped

1/2 c red and green bell peppers -- chopped

10 3/4 ozs low-fat cream of mushroom soup

1/2 c water

1 c twist pasta -- cooked

1 1/2 c frozen mixed vegetables -- thawed


In a skillet, heat oil over low heat. Add chicken, onions, and bell peppers. Cook until chicken is no longer pink and vegetables are tender. Stir in cream of mushroom soup, water, pasta, and mixed vegetables. Cover and cook over low heat for 5 minutes.

Ingredients:
2/3 pound flour
3 large eggs, beaten
1/3 teaspoon salt
4 teaspoons cooking oil
1/3 pound ricotta cheese
1/4 pound Gruyere cheese, grated
1 tablespoon Parmesan cheese, grated
2 large eggs, beaten
2 tablespoons parsley, chopped
ground nutmeg, salt and pepper
1/2 gallon chicken stock
2 tablespoons butter, melted
2 tablespoons Parmesan cheese, grated

Directions:

DOUGH: In a large bowl, mix the first four ingredients together (flour, egg, salt and oil). Form a ball of dough using your hands, then let it rest for about 1 hour.

FILLING: In another bowl, mix together: ricotta, Gruyere and Parmesan cheese, eggs, parsley - then season with nutmeg, salt and pepper. Divide the dough into 2 equal parts. Roll them out (using a rolling pin) to very make a large, thin rectangle.

Place tablespoons of filling on the sheet of dough - about 1 inch apart (as shown in the picture) - until all the filling and dough have been used up. Using a pizza cutter, cut the ravioli in squares (as shown in the picture). Boil the chicken stock in a large pot, then add the ravioli and let it boil in the stock for about 3-5 minutes, until cooked.

Remove and drain the ravioli, then sprinkle melted butter and Parmesan cheese. Toss and serve hot.

I dont know if you want just a pasta, a pasta salad, something with chicken, beef... so here's an amazing (tasting and simple) recipe.

Smoky Chicken Fettuccini
6 slices bacon
1/2 cup diced onion
6 large cloves garlic, peeled
1/2 cup coarsely chopped red bell pepper
1/2 cup (2 ounces) grated smoked Provolone cheese
8 ounces uncooked fettuccini noodles, broken in half
1 cup frozen peas
2 cups diced cooked chicken
1 cup half and half
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon salt
2 tablespoons snipped fresh parsley


1.Bring water to a boil in (8-qt.) Stockpot. Meanwhile, cut bacon into 1/2-inch pieces using Santoku Knife. Cook bacon in (12-in.) Skillet over medium heat until crisp. Remove bacon from Skillet; drain on paper towels. Drain grease from Skillet (do not wipe out).
2.Dice onion using Chef’s Knife. Thinly slice garlic using Ultimate Mandoline fitted with thin slicing blade. Coarsely chop bell pepper using Food Chopper. Coarsely grate cheese using Deluxe Cheese Grater; set aside. Add onion, garlic and bell pepper to Skillet. Cook over medium heat 2-3 minutes or until vegetables are tender. Remove Skillet from heat; set aside.
3.Meanwhile, cook pasta according to package directions (see Cook’s Tip). Add peas to Stockpot; carefully drain pasta and peas using Drainer. Add pasta and peas to Skillet. Add bacon, cheese, chicken, half and half, black pepper and salt; toss well to coat. Cook and stir over medium heat until sauce is slightly thickened and mixture is hot. Sprinkle with parsley; serve immediately.
Yield: 6 servings
Nutrients per serving: Calories 370, Total Fat 13 g, Saturated Fat 6 g, Cholesterol 75 mg, Carbohydrate 36 g, Protein 26 g, Sodium 380 mg, Fiber 3 g
Cook's Tip: A simple way to adjust the consistency of pasta sauce that is too thick is to remove about 1 cup of pasta cooking water using the Nylon Ladle before draining the pasta. Stir a small amount into the sauce as needed.

Smoked Provolone cheese is smoked over applewood for a full-bodied, smoky flavor. Plain Provolone cheese can be substituted for the smoked Provolone cheese, if desired.

One of my favorites is Penne with Vodka Sauce. It is savory and has a great kick. Here is my recipe for it:

1 lb cooked penne pasta
3 Tbsp olive oil
1 medium onion, diced
3 large garlic cloves, minced
I package Italian sausages, crumbled up (sweet or spicy)
1 large can of crushed tomatoes
1.5 cups heavy cream
1 cup vodka
1 Tbsp Italian seasoning
2 tsp salt
2 tsp black pepper
1 tsp red pepper flakes (optional)

In medium sauce pan heat the olive oil over medium heat. Add onions sautee until translucent, then add garlic. Cook until garlic is light golden brown. Remove from heat and place mixture into bowl and set aside. Put the sauce pan back on the heat and add the sausages, cook until browned. Once the sausages are done add the garlic and onion back into the pan, add the tomato sauce, vodka, cream, and seasonings, turn to low heat and simmer until warmed through. Add sauce to cooked penne, serve with shavings of parmegiano reggiano cheese and garnish with Italian flat leaf parsley.

well...simple n cheap... pasta with lentles.... if u wana skip the from scratch deal...boil a pound of ur fav pasta.... in seperate pot boil a can of progresso lentil soup....drain pasta when ready then mix in the soup....dish with ur fave grated cheese enjoy!
