I am making chillie tonight and I found a box of cornmeal so I need a quick and yummy recipie for cornbread.

Cornbread

Ingredients

1/2 c Sifted flour
1 1/2 c Yellow cornmeal
1 ts Salt
2 ts Sugar
3 ts Baking powder
3 Eggs, beaten lightly
1 c Milk
1/4 c Cream
1/2 c Butter, melted

Instructions

Sift the dry ingredients together in a bowl. Add the eggs and milk and beat with a spoon until the mixture is just moist. Beat in the cream and melted butter. (Do not overbeat.) Pour the batter into an 8 1/2 x 11-inch buttered pan. Bake at 400-degrees for 15 to 20 minutes.
Footnote: what I found that kicks it up is to saute some corn, about 3/4 C and add it to the mix, gooood eatin's

If it is a box of cornbread mix: prepare as directed and add a can of sweet kernal corn, bag of shredded cheddar and about 4 or 5 green onions sliced. Very yummy. If it is just the cornmeal use this recipe and still add the corn, cheddar and green onion.

1 cup corn meal
1 cup sifted flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 cup soft shortening
1 cup milk
1 egg, beaten

Preheat oven to 425 degrees Fahrenheit.

Combine corn meal, flour, sugar, baking powder, and salt in a bowl. Cut in shortening. Mix egg and milk together and add to dry ingredients with a few swift strokes. Bake in greased 9x9x2 inch pan for 20 to 25 minutes (or in greased cast iron skillet). If using corn stick pans, bake 15 to 20 minutes. If using muffin tins, bake 20 minutes.

If you like it hotter, add a can of green chiles, or chopped jalepenos to the batter.

throw it in the oven lol or make flat cornbread that look like pancakes...those r my favorite (do it over a flat grill)
