7-Up Cake
This is THE BEST cake!! It is so good! At potlucks and get-togethers, it always disappears quickly. I love the light lemon flavor and the moistness of the cake. I got the recipe from my mother. It's always been a family favorite.

1¾ hours 30 min prep
3/4 lb butter, softened
3 cups sugar
5 eggs
3 cups flour
2 tablespoons lemon extract
3/4 cup 7-Up soda
LEMON GLAZE
2/3 cup powdered sugar
1 tablespoon lemon juice
Cream butter and sugar together for 20 minutes.
Add eggs, 1 at a time, beating after each addition.
Add flour and lemon extract.
Fold in 7-Up.
Pour into well-greased 12-cup Bundt pan or tube pan.
Bake at 325 degrees for 1 to 1 1/4 hours.
Make Lemon Glaze- mix powdered sugar and lemon juice together.
When cake is cooled, dribble with Lemon Glaze.

7-Up Cake
1 small box vanilla instant pudding
1 box white or yellow cake mix (18 oz.)
3/4 cup vegetable oil
4 eggs
10 oz. 7-Up
FILLING:
1-1/2 cups sugar
2 Tbs. flour
2 eggs
1/2 cup butter or margarine
8 oz. can crushed pineapple, drained
4 oz. can coconut
1/2 cup nuts
Combine pudding mix, cake mix and vegetable oil. Add eggs, one at a time, beating well after each addition. Blend 7-Up into batter. Pour into three 9" cake pans that have been greased and floured. Bake at 350 for 20 minutes. Remove from oven; let stand 10 minutes. Remove layers from pans and cool on racks. Place filling between layers and on top of cake. For filling, mix sugar and flour. Add slightly beaten eggs and butter or margarine. Place in top of a double boiler and cook until consistency of syrup. Add remaining 3 ingredients.
VARIATION: Use lemon cake mix and instant pineapple pudding mix.

confectioner's sugar
Instructions
Cream butter and sugar until smooth. Add eggs, one at a time, beating well after each addition. Add flour, lemon extract, and 7UP; mix well. Pour into greased angel food (or bundt) pan. Bake 325F for 1 hour and 15 minutes or until done. Sprinkle with confectioner's sugar.

you can substitute the water & oil for 7-up. It makes the recipe light & fluffy.
