When I was a kid any leftover spaghetti was fried a day or two later in an iron skillet with butter and it was better than when it was originally prepared.

Depends on what you have leftover. Do you mix the noodles and sauce, if so than you need to stop that because that does make for bad leftovers. If you have the sauce separately at least you can make new noodles. My kids will eat any leftover spaghetti we have but the noodles and sauce are separated. By the way you can always freeze leftover sauce and add it to fresh sauce next time you make it.

SPAGHETTI PIE
1/2 lb. spaghetti
2 eggs
2/3 c. grated cheese
1 lb. ground turkey or chicken
1/4 c. sliced celery
1 1/2 c. spaghetti sauce
1 sm. can mushrooms, drained
1 (10 inch) pie pan
4 slices of Mozzarella cheese
Combine cooked spaghetti with cheese and beaten eggs press into pie pan.
Brown turkey or chicken with celery stir in mushrooms and spaghetti sauce. Simmer 15 minutes. Pour meat mixture over spaghetti. Cover with foil. Bake in a heated 350 degree oven for 25 to 30 minutes. Remove foil add slices of cheese. Bake 3 to 5 minutes until slices of cheese are melted.

I have had this happen before too and what I do is bake it. I put the spaghetti in a bowl, mix in the sauce or add more, add cheddar cheese an egg and sometimes ricotta cheese and place this in a baking dish. Cover it with cheddar cheese and bake until hot and brown at about 375. Takes about 30 minutes. Hint: The more cheese you put in the more they love it. Good luck.

If there is no sauce in it then you can:
Heat 2 tblspns of oil in a heavy skillet
Add 3 cloves of chopped garlic
1 tablespoon of chopped ginger
Let it sizzle for a few seconds, then add 1 cup of chopped brocolli, one small onion sliced, one carrot - julienned, 1 sliced green pepper, one sliced red pepper ... let this cook until the broccoli is bright green and begins to soften. Add the cold spaghetti and 2 cups of thinly sliced cabbage. Put in a small splash of soy sauce. Season with salt and pepper. Garnish with chopped scallions.

my family always puts a lil oil (u can use butter) in a frying pan and just fry it up...it gives it a lil crunch to it...add grated cheese while frying..i think it melts in well ;....good luck
