If YOU have 3 apples and YOU take 1, then you have 4 apples.

If *I* have 3 apples and YOU take 1, then I have 2, and you have 1.

If YOU have 3 apples and I take one, then I have one apple, you have 2.

You still have 3, unless there was another pile of apples somewhere, in which case you have 4. You have 3 apples, you take one... But, it doesn't specify if you are taken one of the ones you already have or one from another location.

You have three apples on the table. You take one. So technically, you have one apple. OR you could say that you have three, because you have ONE in your hand and the other two on the tables.

Only if you eat the one that you took, or someone else took it, or you put it away, do you have two left. You didnt specify, so no, you dont have two left.

Your question was open to various interpretations, but this explanation does not make sense.
If you meant you had 3 apples and took one away, you should have said so, but it still depends where you took it, if you took it and put in into your handbag, you simply have 3 apples with one in a different place.

No, you still have 3 left. If I have 3 quarters and I take one of my own quarters, I still have 3 quarters. They're just not in the same place as they were before.
