fast and easy - also a favorite!
If you make your own pie crust, great - if not, buy the rolled up kind that you can use in your own pie plate. Get a can of apple pie filling and a can of cherry pie filling. open them up and mix them together. Add some cinnamon, probably about a tsp or two should be plenty. I usually just put in there whatever feels right. Mix it all together and put it in the pie dish on the bottom crust. Put the top crust on however you prefer it - If you use a premade crust, cut some holes in it for breathing, or you can cut it and do a basket weave with it, however you prefer. Bake it per the directions on the can. If one can says bake longer than the other, do the longer baking version. Its a very delicious pie when it comes out, and is fabulous with whipped cream, cool whip, or even vanilla ice cream. :) mmmmm I make this every year.

Hummingbird Cake - kind of fussy to make but well worht it. If you like carrot cake you will love Hummingbird cake
3 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 eggs, beaten
1 1/4 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 can (8oz) crushed pineapple, well drained
1 cup chopped pecans
2 cups chopped firm ripe banana

Cream Cheese Frosting:
16 ounces cream cheese, softened
1 cup butter, room temperature
2 pounds confectioners' sugar
2 teaspoons vanilla extract
1/2 to 1 cup chopped pecans
PREPARATION:
Preheat oven to 350°. Sift flour, sugar, salt, baking soda and cinnamon together into mixing bowl several times. Add eggs and salad oil to the dry ingredients. Stir with a wooden spoon until ingredients are moistened. Stir in vanilla, pineapple and 1 cup pecans. Stir in the bananas. Spoon the batter into 3 well-greased and floured 9-inch round cake pans. Bake for 25 to 30 minutes,or until a wooden pick or cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then turn onto cooling rack. Cool completely before frosting.
Cream Cheese Frosting:
Combine cream cheese and butter; cream until smooth. Add powdered sugar, beating with an electric mixer until light and fluffy. Stir in vanilla.
Frost the tops of all 3 layers, stack and then frost sides. Sprinkle top evenly with the 1/2 to 1 cup chopped pecans.

I'm a traditionalist, so my favorite is pumpkin pie with whipped cream. Another favorite is pumpkin roll. Look it up and try it..it's well worth the effort.

I love mince meat pie. I made it from scratch one year but it was way too much work. Mrs. Smith's or Marie Callenders have it. Not many people like it but I love it with a little bit of whipped topping on it.
