Asheville, NC is GORGEOUS! Check out the Biltmore Estate & the Grove Park Inn. If you are on a tight budget, you could look into bed and breakfasts (http://www.ashevillebba.com/).

If you want more of an urban locale -- Charlotte is awesome. The Van Landingham Estate is the first place that comes to mind (http://www.vanlandinghamestate.com/). There are also some really great historic hotels uptown. Congrats and good luck!

The Firehouse Inn in Rutherfordton, NC.
Woodwind Chapel in Rutherford County.
Greenhill Plantation,
Chimney Rock Park.
Unless you have an enormous budget, forget about Biltmore or Grove Park Inn. Both places do weddings, but $$$$$$$$$$!
There are small wedding chapels in the mountains, especially near Gatlinburg and Pigeon Forge, TN. Google it.

There is a place called The Umstead Hotel and Spa opening in Jan 07 in Cary, NC...it is a GORGEOUS location and would be the perfect place for a wedding (http://www.theumstead.com). Another fantastic reception site is the Marriott in Winston-Salem (http://www.twincityquarter.com/weddingplanning.html).
