cook a big pan of cornbread

then crumble it up, add in the following
chopped onions
chopped celery
salt
pepper
sage
thyme

just add till it taste/looks right

then add chicken broth(canned is fine) till mixture is moist, wet looking, but not soupy

place it all in any baking dish,, best if its not two thin or thick, say a 3-4 inch one,, bake at 350 for an hour

a rough estimate of portions is , half cup of onions and celery,,,, 1/2 teaspoon of salt,pepper , sage, thyme and one can of broth

but taste/look/ vary it however you want

Cornbread Stuffing

Ingredients

8 tb unsalted butter
2 md onions; finely diced
2 celery stalks; finely sliced
4 c yellow cornmeal
1 1/2 c all-purpose broth
2 ts salt
2 ts freshly ground black pepper
2 tb fresh thyme leaves; or dried thyme
2 tb chopped fresh sage leaves or dried sage

Instructions

MELT THE BUTTER in a large pot over medium heat on the stove. Add the onion and cook 5 minutes, stirring occasionally. Add the celery and continue to cook, stirring occasionally, for 10 minutes. Remove from the heat and pour into a mixing bowl. Add the cornmeal, broth, salt, pepper, thyme and sage and mix well. Remove the pot from the heat and scrape mixture into a large mixing bowl. Place the mixing bowl, covered, in the refrigerator and completely chill the stuffing before stuffing a bird.

Sooooo easy! Take a loaf of cornbread, slice it & cut the slices into 1/2 inch cubes. Put them under the broiler & WATCH THEM. After a few minutes they'll get golden & toasty.

Chop up a medium onion into small pieces & saute it in a little olive oil & butter w/ 2 celery stalks, 1 carrot, & 1/4 cup fresh sage, all chopped small. Saute everything for about 10 minutes, don't allow anything to brown or burn. Take off heat & add 1.5 tsp. salt, 1 tsp. black pepper, 1 tsp. poultry seasoning & 1/2 tsp. cayenne pepper. In a large buttered baking dish, combine EVERYTHING & stir in 1/2 can of chicken broth and bake @ 350 for about 35-40 minutes. You can put a couple little pieces of butter on top to develop a nice crust, too.

INGREDIENTS
4 skinless, boneless chicken breast halves
1 (16 ounce) package dry corn bread mix
1 (1 pound) loaf day-old white bread, torn into small pieces
4 tablespoons margarine
1/2 cup chopped onions
1/2 cup chopped celery
1 (10.75 ounce) can condensed cream of chicken soup
1/8 teaspoon garlic powder
2 teaspoons poultry seasoning
1/2 teaspoon ground black pepper
6 eggs
DIRECTIONS
Place the chicken breast halves in a large saucepan with enough water to cover. Bring to a boil. Cook 1 hour, or until the meat is tender and easily shredded. Shred chicken and set aside. Reserve 4 to 6 cups of the remaining broth.
Prepare an 8x8 inch pan of cornbread according to package directions. Crumble the corn bread into a large bowl. Mix in the white bread.
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan over medium heat, melt the margarine and stir in the onions and celery. Slowly cook, stirring occasionally, until tender.
Stir the onions and celery into the bread mixture. Mix in the chicken, 4 cups reserved broth, cream of chicken soup, garlic powder, poultry seasoning, pepper and eggs. Blend with a potato masher until the mixture is the consistency of gelatin. Use more of the reserved broth as necessary to attain desired consistency. Transfer to a 9x13 inch baking dish.
Bake in the preheated oven 30 minutes, or until golden brown.

I'm not sure if it's how she use to make it, but here's mine, you take your cornbread and cruble it up in a bowl and add diced celery and onion and sage and two raw eggs then you add your turkey juice and mix it up well spread it in a baking dish and bake on around 300 degrees for 45 minutes to an hour

Oh yeah...those unforgettable dressings! The problem is everyone makes their dressing different and I'm sure no one can put the same love in a dressing like "mom" can. Happy Thanksgiving!
