When you cut open an apple it immediately begins browning due to oxidation - why don't cucumbers or a lot of other fruits and vegetables do this....


Do Apples oxidize in our bodies - and if so, are they really healthy for us then?

It has to do with the amount of starch in the fruit or vegetable. Try cutting open a potato and letting it sit, what color does it turn? Another high starch food. Cucumbers do not have a high starch content and so do not have the same reaction.

As far as oxidation goes, yes, some of these reactions occur in the body, but it is the breakdown of the starch that is occuring and it actually helps to turn the starch into molecules that our body needs. So is it healthy? yes. It would be far less healthy if our bodies couldn't break down the food.

When you cut open an apple, a certain mild enzyme in it reactes with the oxygen in the air and the apple turns brown. Cukes don't because they do not have this enzyme.

oxidizes. i can't spell but that's what it does! cukes don't have the ablity to do so.
