Just laugh and tell her that she misunderstood what you meant, or that what you said came out the wrong way. Then say what you meant, which is pretty much what you wrote in your question. "I was excited that I got a new job so I wanted to grab some food to eat the next time we hang out."
On the other hand you might want to find out if she was offended at all, maybe she wouldn't mind going out to eat...

You could cancel. Or if you really want to hang out with her "as friends" send her an email saying something like, "im glad i can finally have a friendly dinner with someone... ever since the break-up i havent had time to just hang out with someone, non-romantically..." Girls are smart creatures (most of the time) and they will totally get the hint if you keep emphasising the "FRIEND" relationship with her...Good luck with this one.

Well..... You could just go out to a buffet dinner, maybe you will end up really liking her. Or even better become really good friends. Unless you don't want the girl you are getting out of a relationship with to see you with another girl.? You could also just explain that yo really just want to hang out and watch a movie, she may like this opportunity to get to know you even better then going out in public.
