Duck is much higher in fat than chicken, so if you are trying to loose weight you might want to avoid it - or if you do eat it, remove the fat and the skin before you eat it.

The "crispy" business is a cooking technique and the addition of some fairly common ingredients not much different from the American counterparts, so 'no points' to that aspect.

Duck, however does contain more fat that chicken or turkey... but is also delicious.

I guess the answer is, the 'Chinese' cooking technique isn't 'bad', any more that our barbecuing chicken pieces with sauce, but it isn't some wild health bonanza either.

As long as you don't OD on it. farmed duck is naturally more fatty than chicken. If your in2 cuisine, try this:-
Get 1Kg small corn fed/ organic chicken
Boil up 3/4 litres of water in a pot.
Dunk chicken in boiling water briefly 3/4 times, returning water to boil each time (dissipates fat)
Remove, pat dry, then paint with dark soy honey, ginger, garlic sauce inside and out.
Leave to dry by hanging up at least 6 hours/overnight
Roast in 220degc oven for 25min
turn it down to 180degc for 35min
turn oven right off and leave 1/2 hour
Serve slices of meat and crispy skin with spring onion and plum sauce wrapped in savoury pancakes. 'Peking' Chicken!

Yes, it's fattier than chicken but better than a steak still.
So unless it's a steady part of your diet, don't loose sleep over it.
