I looked at another version of this question here: http://answers.yahoo.com/question/index;_ylt=ApmX34xl4Qx0B3K2ZT3SHrkezKIX?qid=20060810095115AAYVITX&cp=9&tp=9#all-answers

but then I also found this page here:

and

So who's right or is this still a fairly controversial issue? Neither of the answers seemed to give any satisfactory answers and I don't know if a professional opinion is needed or what. thanks.

I never peel the potatoes. It takes too much time. But I've always heard that the nutrients are in the peel. But who knows!!

The peel has much of the beneficial fiber. Just under the skin are things like vitamin C. Then the center has all sorts of yummy good for you vitamins and minerals. When I was pregnant my doctor told me to eat a small potato every day because it was so complete in nutrients. What a great excuse to eat something I love so much! Hope this helps

Allot fo the nutrients are in the skins of more than just potatoes.
Plants leach nutrients from themselves through thier fruits and gain nutrients for themselves through the skins of the fruit as well.

Either way you look at it the highest concentration of nutrients is in the skin however, not all skin is edible. I never peel my potatoes and have found the kinds I like the best cooked with the peel on.
