I would always buy these at a bakery, I never thought of making them, thanks for the idea! Here's the recipes I found :)

Cheddar and Ham Muffins

Prep time: 5 minutes
Cook time: 15 minutes
Ingredients:

3/4 cup low-fat sharp Cheddar cheese
1/4 cup fresh grated Parmesan cheese
1 3/4 cup reduced fat all-purpose baking mix
1 cup low-fat skim milk
1/2 teaspoon black pepper
1/4 cup low-fat ham, finely chopped
Preparation:
1. Preheat oven to 400°F.
2. Mix cheeses, milk, and baking mix together; add pepper and ham.
3. Mix well and spoon into lined muffin pans 1/2 full.
4. Bake 12-15 minutes or until golden brown.

Yield:
9 muffins

Cheddar n Ham Muffins

1 cup shredded sharp white cheddar cheese
1 ounce grated parmesan cheese
1 3/4 cups baking mix (like bisquick)
1 cup skim milk
1/2 teaspoon black pepper
1/4 cup ham, chopped fine

Mix first four ingredients together, add pepper and ham.
Mix well and spoon into muffin pans 1/2 full.
Bake in preheated 400 oven 12-15 minutes until golden brown.

Ham and Cheese Muffins
Bursting with creamy melted cheese and ham, these big hearty muffins make a great stand-alone breakfast, or serve them with soup or salad for lunch.


Prep Time:10 min
Start to Finish:30 min
Makes:12 muffins

2 eggs
3 cups Original Bisquick® mix
1 cup milk
3 tablespoons vegetable oil
1 package (4 ounces) shredded Cheddar cheese (1 cup)
3/4 cup chopped fully cooked ham (1/4 pound)

1. Heat oven to 400°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. (Spray will work better than greasing or using paper muffin liners.)
2. Beat eggs slightly in medium bowl with fork. Stir in Bisquick mix, milk and oil just until moistened. Stir in 3/4 cup of the cheese and the ham. Divide batter evenly among muffin cups. Sprinkle remaining 1/4 cup cheese evenly over tops of muffins.
3. Bake 18 to 20 minutes or until light golden brown. Immediately remove from pan. Serve warm. Wrap and refrigerate any remaining muffins.

Planned-Overs
To reheat a muffin, microwave uncovered on High about 30 seconds or until hot.

Substitution
Want to pump up the flavor? Use sharp Cheddar cheese.

Macaroni and Cheese with Ham,
Applesauce Nut Muffins

From kitchen to table in 1 hour

Macaroni and Cheese with Ham
1 1/2 ounces macaroni
1 1/2 ounces ham
2 ounces cheddar cheese
1/2 cup milk
1/2 teaspoon cornstarch
1 pinch pepper
non-stick cooking spray

Applesauce Oatmeal Nut Muffins



Lemon Broccoli
2 ounces broccoli
1 teaspoon water
1 teaspoon margarine
1/4 teaspoon lemon juice
1 pinch pepper






Directions

In a saucepan, heat water on high.

Meanwhile, dice ham and cheese into cubes.

Add macaroni to boiling water. Cook on high until pasta is tender (about 10 minutes).

In a measuring beaker, mix milk, cornstarch and pepper.

Turn on oven to 350 degrees. Spray an oven-proof baking dish with non-stick cooking spray.

Drain and rinse macaroni and pour into the baking dish.

Add ham and cheese to macaroni and then pour milk mixture over the top.

Put casserole into the oven, uncovered.

Spray muffin tins with non-stick cooking spray.

In a mixing bowl, combine sugar, eggs, olive oil, applesauce and milk. Mix well.

Stir in rolled oats.

Dump flour on top of batter and then sprinkle baking powder, cinnamon and nutmeg evenly over the top.

Using a fork, blend baking powder and spices into the flour and then mix everything together.

Add chopped walnuts and mix thoroughly.

Using a 1/3 measuring cup, fill muffins tins. Place in oven.

Remove casserole from the oven and mix well. (The cheese should be melted by now.) Return to oven.

Set timer for 20 minutes.

At the end of that time, chop broccoli and put it into a saucepan with a lid. Add water and heat on medium high until water is just beginning to boil.

Cover tightly and reduce heat to lowest.

After 5 minutes, turn off heat. Add margarine and stir to melt. Sprinkle with lemon juice and pepper.

Serve with muffins and macaroni

Preheat broiler. Toast muffin. Place ham on bottom half of muffin, spoon egg onto ham and top with cheese. Place under broiler for about 30 seconds or until cheese melts.

Nutritional analysis per serving: 320 calories, 15.5 g fat (6 g saturated fat), 27 g carbohydrates, 18 g protein, 2 g fiber

2 cups unbleached all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 cup plain yogurt
1/2 cup butter, melted and cooled
2 eggs, beaten
1 1/4 cups shredded cheddar cheese
1/2 cup chopped cooked ham (I used country ham)
1 teaspoon dried basil

1. Heat the oven to 400°F In a bowl, mix together the flour, sugar, baking powder and baking soda.
2. In a separate bowl, mix the yogurt, cooled butter and eggs.
3. Add the yogurt mixture to the flour mixture and mix just until combined.
4. Fold in the ham, cheese and basil.
5. Spoon into greased muffin cups and bake for 15 to 20 minutes, remembering to check after the first 15 minutes are up.
