Peel, cut into cubes, boil on stove until very soft, add stick of butter, 1/2 cup maple syrup, 1/2 cup brown sugar, some cinnamon, nutmeg.

Hollow out and fill with stuffing and bake in 375 degree oven until squash is soft.

You can also run through food processer to get it real smooth if you like it that way....like mashed potatoes

This is the easiest, most tasty butternut squash recipie I know.

One butternut squash, peeled, scooped out, and cut into cubes.
2 cups of chicken stock (you can use bullion cubes too)

Steam cubed butternut squash in 2 Qt. pot using steamer. Use 2 cups of stock to steam for 12-15 min. or until squash when poked with fork is very soft.

Tranfer all of it to blender, (squash and stock) add 1/4 teaspoon salt, and a pinch of pepper. Puree until smooth.

This creates a fat free soup (unless you add butter) that resembles a cream soup! It is truly a meal and very tasty and CHEAP to make. TRY IT before you pick best answer!

Peel, deseed, cut flesh into chunks, cut red onions, fennel, eggplant (salt first), sweetpepper (red,green, orange or purple), mild chilli ( if liked) into similarly sized chunks ( You don't need all of these, but the more the tastier). Put into an oiled roasting tin, sprinkle with olive oil and bake in a medium oven for 20-25 mins turning once to ensure even cooking. Then add cherry tomatoes and black olives to taste and roast for a further 10 min. Serve hot or cold tossed with fresh basil and fresh ground black pepper. Bon appetit!

Funny you should ask that as for the last two days I have had one staring at me from the veg compartment of my fridge. I had no idea whatso ever how to cook it. Now I know and will try the recipe for roasting in the oven.

Slice in half, scoup out the seeds, place about a 2 tbsp in each half, pour some brown sugar on top and bake at 350 for a hour.

Cut it in half, scoop out the seeds and strings, put butter (not margarine) and brown sugar in the hole, cover with foil and bake at 350 degrees F for about an hour or till it's done.

Take the foil off and dig out the goodies.

Peel, cut in 1/2 and scoop out the pulp. Cut into cubes, toss with salt, pepper, and olive oil and roast in the oven @ 400 degrees-until soft and edges are crispy....so yummy.

You can also do it in the microwave. Cut in half and scrape out the guts. Put on plate cut side down. Cook on half or full for until done ( I can't remember how long) Turn upside down and ad butter and brown sugar or scrape out and put into bowl

Oven or pan frying will do. I love butternut squash fried! It tatses very similar to pumpkin or marrow.

Chop it into chcunk and put in a roasting tin with oil for 30-45 mins
