Lots of ways!
Grill it - spread some butter and sprinkle some paprika over it and grill under a medium grill until done.
Fry it - Same as above, but cook in a frying pan
Bake it - put in an oven-proof dish, cover with milk and bake at 200C or gas6 for about 20 mins (tastes better with smoked haddock though)
For all of the above, serve with rice and peas.
Obviously you can add/change the seasoning, but that's your basic cooking of it - experiment, see what you like!

Ingredients
4x110g/4oz smoked haddock portions
125g/4½oz peeled prawns, cooked
55g/2oz butter
1 leek, sliced
30g/1oz flour
300ml/½ pint milk
salt and freshly ground black pepper
3 large potatoes, peeled, par-boiled and sliced
Method
1. Preheat oven to 200C/400F/Gas 6.
2. Melt half the butter in a large saucepan and cook the leeks for 2-3 minutes until soft.
3. Stir in the flour and cook for 1-2 minutes.
4. Remove from the heat; gradually stir in the milk. Return to the heat and cook stirring until the sauce has thickened. Simmer gently for 5 minutes.
5. Stir in the prawns and season with salt and pepper.
6. Place half the sauce in a pie dish; add the fish and spoon over the remaining sauce.
7. Top with the sliced potatoes and dot with the remaining butter. Season with some more pepper.
8. Place the dish on a baking sheet and bake for 35-40 minutes until the potatoes are golden

ITALIAN-STYLE BAKED HADDOCK
1/4 cup (1/2 stick) butter
1 small onion, chopped
1 green bell pepper, chopped
1/4 teaspoon dried basil, crumbled
1 14 1/2-ounce can tomatoes, drained, chopped
Salt and pepper
1 1/2 pounds haddock or lingcod fillets
2 cups grated mozzarella
Preheat oven to 350°F. Grease 9-inch glass baking dish. Melt butter in heavy large saucepan over medium-high heat. Add onion, bell pepper and basil and sauté until vegetables are tender, about 10 minutes. Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring constantly, about 5 minutes. Arrange fish in prepared dish. Pour sauce over. Sprinkle mozzarella. Bake until fish is cooked through and top is golden, about 25 minutes.
Serves 4.

Rectangle pan...oven to 375 degrees
Fry haddock, onion, potatoes in olive oil until getting soft.
Put all that in the pan and top with hard boiled eggs and bake for about 30 minutes. Top with black olives.
You can also use a chicken cacciatori recipe and substitute haddock for the chicken.

I like it poached or grilled. I also love it in kedgeree - had some the other day scrummy.
Basically - cooked long grain rice, hard boiled egg choped, cooked frozen peas, cooked and flaked smoked haddock, chopped parsley. Can also add very finely small chopped onion.
Cooked and left overnight and then reheated in the microwave the flavours absorb more and it really is delicious - do go ahead and give it a try you wont be disappointed.

Cook fresh haddock like cod.
In Scotland they eat haddock when they have fish & Chips.

tandoori grilled haddock:
because of the extensive ingredients this dish sounds and looks difficult to make but believe me it's not.
2-4 fillets of haddock (bones removed)
1 tablespoon lemon juice
1 tsp Worcestershire sauce
1 tsp soy sauce
1 tbsp olive oil
pinch of black pepper
1/2 tsp garam masala
1/2 tsp tandoori masala
pinch of salt
finely chopped corriander
apart from fish put all ingredients into bowl and mix.
line a baking tray with foil.
take fish and dip into mixture and place onto tray.
grill for around 5 minutes on each side.
remove the fish with the foil wrapped around it to contain the juices.
serve with potato wedges and enjoy
p.s. these ingredients are availabel at all asian stores...

very simple wrap it in tin foil with a knob of unsalted butter put into a hot oven for approximately 15 Min's gorgeous and no smell of fish in the house
