Pickles are more likely to be eaten in a sandwich (assuming you mean I would be making my own sandwich at home) if they are associated in combinations that are appealing to most people.
For example, pickles go with Russian dressing, maybe associate them (for cold sandwiches) in a Reuben style for roast beef. Or, Turkey, Russian, Pickles and Provolone...
Go the same route for your hot sandwich ideas - pickles are tasty to most people with ketchup and mustard...and would then be great on veggie burgers.
It's the associations that you need to make. Keep in mind, there is a reason that items like this have recipies on the side...and it's the same reason that a room in a house that's up for sale, looks better with a little bit of furniture.
People need a little direction to figure out what will please them.
How to eat their pickles.
Or, where to put their television.
Take the guesswork out of it - and you've got it.
