You mean for the upcoming turkey Bacchanalia? No, we get a couple loaves of sliced French bread, tear the slices into chunks, then put them on a baking sheet in a 300-degree oven for 15-20 minutes to dry them out and toast them lightly.
Then saute minced onions and celery (or fennel) in butter and a little olive oil, with sage and black pepper; if you use the giblets (we do), mince them fine and add them at this point. When they are cooked, toss in the toasted bread and stir. Remove from the heat, add a couple of beaten eggs, and stuff into the bird.
Add-ins can include chopped pecans, diced tart green apples (better in goose but good in turkey), roasted green chiles (though they're better in cornbread), and roasted chestnuts.

I guess it considered dried. I use cornbread and crumble it and let it sit overnight. Then the next morning put it all together. So, it does dry out overnight.
