Grass is not of interest to them. They eat leaves off trees. The fact that their neck bones and their leg bones are longer is useful as is the length of their tongues that they grab leaves with.

That is a mutation not an adaptation. When the first giraffe with a longer neck was born it had an advantage over others of that species. Its descendants with long necks were also able to reach more leaves and so they prospered while the standard neck ones died off for lack of leaf access. Being the only ones reaching the tall leaves was the key to their having a unique food source and being successful.
