What visa does your fiancee have? Is it for the UK?
If all she is doing is in transit in AMS airport, then she does not need a visa.

Yes she can. You don't need to go through any immigration control in Amsterdam when connecting between Russia and the UK.

if she gets a straight transfer from flight to flight or you could ask her to look into amsterdam rules or the policies of the airline or even better you can get dirrect flights to the UK try to get a direct flight
