I'm not sure if you want the entire paragraph corrected, but the "it's" issue is incorrect. It should be "its", which is the possessive form of "it", while "it's" is a contraction meaning "it is"
(its = something belonging to it, it's = it is)

One herb with many healthful uses is lemongrass. (now that we've stated lemongrass has MANY healthfull uses, we have to state what they are)

(This might be a good time to explain lemongrass pot. Is it made into a tea? Or is it added to water and used for other purposes?)

It(For example here you could explain "It" as "Lemongrass tea") is used to improve the immune system thus guarding against influenza...(add others.)

(What do you mean "physical loading of metabolism." Do you mean excess salt? Does soaking salty foods in lemongrass reduce the salt content?)

(Once you have discussed the medical attributes in using lemongrass, then move on to the delightful taste:)
