usually its the white meat of a crab, sometimes the brown which has been bleached. alternatively in cheaper versions its part crab, mostly various meat from white fish. another type is a seafood stick which is meat from many fish bunged together. if you go to a traditional fishmongers you will get an actual crab stick. best to just go to a fish market or fishmonger and buy a whole crab

It depends on where you buy them from but most of the time they are made up of random bits of left over fish (not crab meat) with a red strip on the top which is a flavouring to make it taste like crab but hey they do taste good. try to go for the more exspencive brands it might have a higher content of crab?

I think it's all the sweepings from the fish processing factory floor swept up, bleached, compacted into sticks and painted pink on the outside. They have a horrible texture !
