The bible tells that a thousand years is as a day to God. Going by this and also the calculations made by scientist on how long the earth has been in existence, God used more than a literal 6days to create the earth and mankind. As you've said and even the bible makes us know that God can do anything, yet, at the same time, God took his time in preparing the earth very well for mainly humans to inhabit, that is why we were created last, everything was prepared and waiting for humans to enjoy. so just as an artist will take his time to make a masterpiece even when his reputation is superb, God took his time for the benefit of all mankind.
P.s. God created the world in 6days and rested on the 7th

He created the world and everything in it, put Adam in the Garden and made Eve in six days. That's 6 X 24 hours. God doesn't lie, doesn't say what He doesn't mean, that's what it means, six days at 24 hours each day.
And yes, He could have created the world in a snap, but isn't a work of Love worth a few days attention? And just look at the wonderful thing He created .... such a perfect world.

Creation was made to be sacred. In taking seven days, God is pledging Himself to His creation as a sacrament. While the work was done in six days, God is "sevening" Himself in the act of Creation by establishing the seventh day as part of the act. In the culture of the time, to seven ones self was to swear and oath or to bind ones self sacredly.

The Bible does not say how long it took God to create the earth and the rest of the material heavens. If you will look closely in Gen.1:2, the earth was already in existence BEFORE the first creative day started. The creative days were vast time periods that Jehovah used to prepare the earth for animal and human habitation. Before the first day even started, the earth could have been in existence for millions of years.

On the Soul plane time does not exist. To God, time does not exist, therefore the creation, as perceived in human terms, can take as long, or as short as whoever likes. God would not argue about that.
Time is a concept limited to the physical plane.

Actually the creation story which begins at Gen 1:3 to 31 took 6 days. God rested on the seventh day - Gen 2:2 I think God wanted to set an example to man to work for six days and have one day of rest to have fellowship with and worship Him. In God's plan man should not work unceasingly and must have a proper day of rest weekly. That is why those who work too hard without proper rest are prone to sickness because they do not do what God has designed for them to do..

The 7 days of creation are in essence a overview of human history and of God's dealing s with mankind, and the development of spirituality within us. Throught the Bible it will say things like:
Exodus 20 "For in six days the LORD made the heavens and the earth, the sea and all that is in them, and rested on the seventh day; therefore the LORD blessed the sabbath day and made it holy.
Isa 55:8 "For My thoughts are not your thoughts, Nor are your ways My ways," declares the LORD. 9 "For as the heavens are higher than the earth, So are My ways higher than your ways And My thoughts than your thoughts.

God is not bound by time. He probably spent a few minutes on the first day, zoomed ahead to the second day where he spent another couple minutes and so on, but took six days to do it to fulfill a representation of the law as was given to Moses. Then rested on the seventh day just like he wanted the Jews to do.
