2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 teaspoon vanilla extract
3/4 cup sugar
1 cup semisweet chocolate chips
Preheat oven to 300º F. To prevent burning you can bake on an air cushion
baking sheet or put parchment paper on a regular cookie sheet.
Beat egg whites, salt and cream of tartar until very firm.
Gradually add sugar and mix. Fold in vanilla chocolate chips.
Drop by teaspoonfuls on pan.
Bake 300 degrees for 25 minutes. They should only be lightly browned.

1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 large eggs
2/3 cup sugar
1/2 tablespoon brewed espresso
1 teaspoon vanilla
2 tablespoons butter
2 ounces extra-bittersweet chocolate -- chopped
3 ounces unsweetened chocolate -- chopped
3/4 cup mini chocolate chips
Preheat oven to 375º. Line 2 baking sheets with parchment paper.
In a small bowl, whisk together the flour, baking powder, and salt. Set
aside.
In the bowl of an electric mixer, briefly whip eggs to break them up.
Add sugar, espresso, and vanilla and beat on high speed for 15 minutes,
until thick.
While eggs are whipping, place butter in the top of a double boiler or in a
metal bowl suspended over a pot of simmering (not boiling) water and scatter
the extra-bittersweet and unsweetened chocolate on top. Heat until butter
and chocolate melt. Remove boiler top from over the water and stir chocolate
and butter until smooth.
Gently fold chocolate mixture into egg mixture until partially combined
(there should be some streaks).
Add flour mixture to batter and carefully fold it in. Fold in chocolate
chips.
If batter is very runny, let it rest until it thickens slightly, about 5
minutes.
Drop batter by heaping teaspoonfuls onto prepared baking sheets and bake
until puffed and cracked, 8 to 9 minutes. (Testing note: baked batter may
not crack, but will still receive raves.) Cool on a wire rack before
removing from the baking sheets.

1/2 cup applesauce
1 teaspoon vanilla
1 1/2 cups flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup apple -- shredded
1/2 cup carrot -- shredded
1/2 cup coconut -- flaked
1/2 cup raisins
1/4 cup nuts -- chopped
Combine eggs, oil, applesauce and vanilla. Mix well. Add flour, sugar,
soda, cinnamon, apple, carrot, cooconut, raisins and nuts; mix until
blended. Spoon batter into paper-lined muffin cups, fill cups half full.
Microwave 6 muffins at a time, uncovered, 2 to 2 1/2 minutes or until no
longer doughy. Rotate pan once. Continue with remaining batter.
BANANA CREAM CHOCOLATE CHIP MUFFINS
1 cup packed brown sugar
1/2 cup butter, softened
3 ounces cream cheese, softened
2 bananas, mashed
1/4 cup sour cream
1 egg
1 1/2 cups flour
3/4 cup chocolate chips
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Beat brown sugar, butter & cream cheese in mixer bowl until creamy.
Add bananas, sour cream & egg; mix well. In a separate bowl, combine
flour, chocolate chips, baking soda & baking powder; mix well. Make a
well in center of ingredients. Pour banana mixture into well & mix
just until moistened. Fill greased muffin cups 2/3 full. Bake in a
preheated 325 degree F oven for 20 to 25 minutes or until muffins test
done. Makes 12.

How about some fresh bread ,or gingerbread or christmas cookies for giving away. These items freeze well and christmas is right around the corner. Thanksgiving is soon also and pumpkin rolls are great. They also freeze well. If you would like the pumpkin roll recipe,please e-mail me.
