GRILLED RIB-EYE STEAKS WITH PARSLEY-GARLIC BUTTER
The garlicky herb butter is similar to the butter served with escargots in southwestern France. IMPROV: When preparing the butter, try a shallot instead of garlic, and thyme instead of parsley.
For the Parsley-Garlic Butter, mix together in small bowl, then cover and chill:
1/2 cup (1 stick) butter, softened
1 tablespoon finely chopped fresh parsley
1 tablespoon chopped fresh chives
1 garlic clove, pressed
2 teaspoons Cognac
Salt and pepper
Prepare barbecue (medium-high heat). Rub with generous amounts of salt and pepper:
3 1 1/2-inch-thick rib-eye steaks (about 1 pound each)
Grill steaks to desired doneness, about 6 minutes per side for medium-rare. Cut each steak in half, top with spoonful of chilled butter, and serve.
Makes 6 servings.

Easiest way to make steak is to just sprinkle a coarse salt (kosher salt, preferrably) and pepper on each side ... add a little garlic salt ... experiment with lemon pepper and a few drops of soy sauce. IN this weather I can't grill anymore, so what I do is preheat my oven to broil (if you need a temperature, do 500 degrees) put steak on top rack of oven and broil it for 5-7 minutes, this will be medium rare. Hope this helps.

At-Home Steakhouse Steak
2 x New York steaks prime or choice grade preferred
coarse salt such as kosher salt, to taste
freshly ground black pepper to taste
Cook's notes: To season a cast-iron skillet, rub it with canola oil or peanut oil. Sprinkle in a little coarse salt, such as kosher salt. Place in middle of preheated 500-degree oven 1 hour. Allow skillet to cool and wipe out with a cloth or paper towel; repeat process.
Preliminaries: Place seasoned cast-iron skillet in a 500-degree oven for 1 hour. About 30-45 minutes before cooking, remove steaks from refrigerator. Preheat outdoor barbecue.
Season meat on both sides with salt and a generous amount of freshly ground black pepper.
Cautiously carry heated skillet to outdoor barbecue and place on grill. Place steaks in skillet and sear 1-2 minutes on each side, turning meat with long tongs.
Remove steaks and place on high-heat setting on grill. Grill about 6-7 minutes on each side, covered with barbecue lid, or until meat reaches the desired degree of doneness. Grilling times will vary depending on the thickness of the meat and heat of the grill.

i like steak myself. i sprinkle lightly with lowery's season salt, lightly with black pepper and crushed thyme leaves. powered garlic goes good on it also. grille to your choice.
